Mung beans contain 24 to 30% crude protein which is about 3 times as much as corn or sorghum grain but about 40% lower than the 44% crude protein concentration found in soybean meal. Mung beans contain approximately 40% less lysine than soybean meal but are equivalent to soybean meal when lysine is expressed as a percent of crude protein.
