nowadays, every kitchen has to have some sort of ventilation, usually in the form of a canopy. Ventilation in commercial kitchens has been the subject of recent legislation (bs 6173:2001) and is no longer a simple issue. New ventilation systems installed by us fully comply with all current legislation.
