An important caloric foodstuff rich in vitamins, minerals, tanning and aromatic substances, a perfect source of protein which may well replace animal protein. Walnut kernels for 60% consist of fat, mostly unsaturated, which contains no cholesterol. They are used in many branches of industry, in particular confectionary, canning and production of oil. Walnut oil has especially good taste: valuable aromatic compounds are obtained from it – rose, violet, citrina essential oils. Walnut oilcake is used for animal feeding.
