Mediterranean (Rosemary and Thyme)
Thyme (Thymus spp.). This species forms a shrub of about the size of a hand; large foliage with leaves of about 1 cm at the most, including the stalk, oval shaped. Sometimes, the flower has tiny corollas and are stamenless. Normally they are very visible, attached to the upper lip of the corolla, the two external ones, bigger than the internal ones, and all of which have brightish pink anthers. The corolla's size is not usually more than 7 to 8 mm., and is divided into two lips: the upper one, low-cut, and the lower one which is subdivided into three diverging lobes. It is pink or white coloured. Blossoms in spring, from March onwards.
Rosemary (Rosmarinus officinalls). Evergreen bush, aromatic, reaches a height of about 2 m with cylindrical leaves of about 4 cm long. Flowers are grouped in bunches on the leaves. The calyx is a red or green colour, divided in two lips covered in hairs. The corolla is a pale blue colour made up of two lips, the bottom one is where the insects alight and another smaller one on top. Blooms in the Spring and Autumn.
Very light yellow colour, white, max 34 mm Pfund. Delicate aroma, slightly balsamic, not too intense but perceptible. sweet taste. May not tend to Crystallize.
