There are different grades of syrup based on colour and flavour. All grades have the same sugar content and it is a matter of preference whether you choose extra light, light, medium or amber. The lighter syrups are best for candy and maple topping on ice cream. The darker syrup is best for cooking. Medium the most preferred grade is good for nearly all uses.
