
Onion flakes are obtained from varieties of onion (allium cepa) that have been specially selected and grown with a view to being dried. Prime grade fresh onions are sorted, washed, finely sliced and dried by means of hot air. 12 kilos of fresh onions are needed to make 1 kilo of dried onions. The dried onion flakes can then be grilled, i.e. roasted. Onion flakes that have undergone this process have the flavour of cooked onions, with enhanced aromatic qualities. Onion flakes can alternatively be fried in vegetable oil in order to obtain the flavour of onions that have been browned.
