The nibs already roasted and sterilized, are transformed into liquid paste, called mass or liquor of cocoa by a mill with brooches (MAP1000) or a mill knives

Cocoa liquor (85%) + Cane sugar (15%) The liquor or mass of cocoa is mixed in the sugar by kneading until obtaining an homogeneous paste with a WINER 100.
