With apples hardness is not an indicator of ripeness. Other techniques are used to determine when to harvest the fruit such as checking the colour of the pips or carrying out the iodine test. The firmness of the flesh can also vary greatly depending on the length of time for which the fruit is stored after being harvested and before being sold.
This varies according to the variety. Consumers tend to prefer flavoursome varieties such as Gala and Fuji.
