A Pacific Northwest native, I grew up not far from a family-run chocolate shop specializing in handmade confections. It wasn?t until I moved away to school to become a research scientist that I realized how difficult it is to find fresh, local, artisan chocolates. Some years later, having eaten the last piece of chocolate sent from home, I set out to make my own, not knowing what I was getting into. The challenge was more intriguing than I expected, and the obsessive scientist in me wouldn?t give up. What developed was a passion for the confection that is fascinating to study and remarkable to eat. I decided to start selling my chocolates when the demand from family and friends became overwhelming and I realized I was on to something. I organized a group of lucky tasters and experimented with recipes until I had decided on my favorites. Unlike their long shelf-life counterparts, the chocolates I developed are each hand made using only pure, fresh, high quality ingredients. These treats are rich, creamy, and worth the indulgence.
